Simpson Spring Soda and Water

In 1694 the first European settlers arrived in what is now South Easton, Massachusetts, 30 miles south of Boston. They found a pure spring that provided abundant drinking water for native Americans centuries before. One of these settlers, William Hayward, built his home near the spring. His son, born the next year, lived there for 79 years.

After the Hayward homestead was abandoned in the late 1700s, the land came to be known as Cynthia Park. The pure spring water provided refreshment for outdoor religious services and festivities for many years. Samuel Simpson acquired the spring about 1830, and it was during that time that the spring became known as "Simpson's spring".

Nashoba Brook Bakery opened for business on September 11, 1998 in an old warehouse in Concord, Massachusetts on the banks of the Nashoba Brook, a tributary of the Assabet River. The owners – Stuart Witt and John Gates- dreamed about and planned for that day for more than a year. For several years, Stu had worked for a successful artisan bread company in Burlington, Vermont. John had just completed law school at the University of Virginia, but decided to forego plans to be an environmental advocate and join Stu instead in a burst of entrepreneurial energy.

For as long as we can remember, Dave has made his own homemade salad dressing and barbeque sauce for family dinners and barbeques. We have experienced many different flavors and types, but over the years, one dressing, in particular – the balsamic version, has been everyone’s “favorite”, hence the name “ Our Favorite ”.

The barbeque sauce was different. Everyone always loved whatever was concocted, but there was no set recipe. With a little hard work and quite a bit of experimentation, a recipe was developed that we are also proud to call “ Our Favorite ”.

  • Clear Flour Bread specializes in making the authentic breads of Italy and France. Using simple ingredients - flour, water, salt and yeast - we scratch mix and hand shape long fermented doughs for stone hearth baking.

  • All of our flours are unbleached and unbromated. Our rye, whole wheat, buckwheat, and 7-grain blend are organic and stone ground. No dough conditioners, preservatives or improvers of any kind are added.
  • Our delicious baguettes and boules, batards and loaves are made fresh daily by a highly skilled staff committed to preserving the art and craft of traditional bread making. We hope you will love eating our breads as much as we love making them.
